Apple Butter
16 apples pealed, cored and sliced
1 1/4 cup of sugar
3 tsp. cinnamon
2 T. vanilla
Place apples in a greased dutch oven.  Sprinkle with cinnamon, sugar, and vanilla.  Bake covered for 1 -1 1/2 hours or until apples are tender.  Puree in blender until smooth.

Banana Bread
3 cups flour
1 tsp baking soda
3/4 tsp. salt
3 eggs
2 cups sugar
1 1/3 cups vegetable oil
2 T. vanilla extract
3-4 medium ripe bananas mashed (about 1 1/2-2 cups)
1/2 cup milk
1 1/2 cups semi-sweet chocolate chips (optional)
Preheat oven to 350.  Coat two 9x5 inch loaf pans with cooking spray.  In a large bowl whisk flour, baking soda, and salt. Set aside.  In electric mixer, beat eggs,
sugar, and veg. oil until combined.  Beat in flour mixture gradually.  Add vanilla, banana, and milk just to combine.  Add one cup of the chocolate chips. Divide
Batter evenly in prepared pans.  Bake for 60-65 minutes on middle rack.  At the 15 min. mark, sprinkle 1/4 cup of choc chips on the top of each loaf.  Enjoy. 
Please Note:  This bread freezes extremely well and tastes awesome frozen.

Bread Pudding Recipe

1 loaf of French Bread cut into 1 inch cubes
2 tablespoons butter, melted
6 eggs, beaten
4 cups milk
3/4 cup white or brown sugar
2 teaspoon ground cinnamon
2 teaspoon vanilla extract

Spray a 9x13 inch baking dish with cooking spray.  Fill with bread cubes.  Pour melted butter over bread.  In a mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.  Cover baking dish and refrigerate for atleast 4 hours or overnight.  Preheat oven to 350 degress.  Bake in oven uncovered for 45 minutes or until the top springs back when pushed down.                 

Lemonade - the cold, fresh squeezed, homemade kind = YUM
The recipe calls for 1 1/2 cups of lemon juice.  This equals approx 6 lemons.  It is delicious!

Zucchini Bread
3 cups grated zucchini
3 eggs
1 cup vegetable oil
2 cups of sugar
3 cups of flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
1/4 tsp baking powder
3 tsp vanilla

Preheat oven to 350.  Grease two loaf pans with cooking spray.  In separate bowl sift flour, baking soda, salt, cinnamon and baking powder.  Set aside.  In a large mixing bowl hand mix eggs, oil and sugar until smooth.  Add vanilla.  Slowly incorporate flour mixture, scraping sides until smooth.  Add in zucchini and mix just until combined.  (Mixing by hand will prevent a dense cake).  Divide better evenly between 2 pans.  Bake for 50-60 minutes. Test with toothpickto ensure doneness.  Remove bread from pans and cool on cooling rack.
