Balsamic Vinaigrette
3/4 cup olive oil
1/4 cup balsamic vinegar
2 tsp. brown sugar
2 cloves minced garlic
1/2 tsp salt
1/2 tsp pepper

Beer Bread

Broccoli Salad
1/2 red onion - sliced thinly
1 tomato seeded and chopped
1 head or 2 lbs broccoli florets chopped
3 slices of bacon - chopped and drained
3/4 cup mayo or light may
2 T apple cider vinegar
1/4 c. sugar
1/4 tsp. black pepper
1/2 tsp salt

Combine chopped broccoli, sliced onion, crumbed and strained bacon, and chopped tomato.  In a separate container, whisk mayo, salt, pepper, sugar, and vinegar until combined.  Pour over broccoli mixture.  Stir to combine and refrigerate atleast 1 hour.

Caesar Salad
Romaine Lettuce
4 T. olive oil
1 tsp red wine vinegar
2 cloves garlic, minced
3 T mayo
3 tsp grated Parmesan
1 tsp black pepper
1 tsp Dijon mustard
4 drops Worcestershire
Whisk dressing and toss with chopped romaine.

Cauliflower Salad
1/2 red onion - sliced thinly

1 head cauliflower
3 slices of bacon - chopped and drained
3/4 cup mayo or light may

Cucumber Salad
Thinly slice or shave 3 cucumbers.  Add salt, pepper, and 1 tsp sugar to cucumbers.  Add a spoonful of sour cream and a squeeze of lemon.  Stir to combine.  Chopped dill and thinly sliced onion is optional.





Garlic and White Cheddar Mashed Potatoes
Boil chopped russet potatoes.  If I have organic potatoes, I will leave the skins on, if not, I will peel them.  Once fork tender, mash with ricer.  Saute 3 minced garlic cloves in 1 T. olive oil on low for 2-3 minutes.  Add milk and butter to potatoes to get desired consistency.  Add garlic and 1 cup grated white or yellow cheddar cheese. Salt and pepper to taste.  (This week I have some leftover aged white cheddar that I will be adding, but any type of cheddar with suffice)



German Potato Salad -
5 lb Red Potatoes - skins on, cut into 1/2 -1 inch pieces
3/4 cup apple cider vinegar
3/4 cup water
3/4 cup sugar
2 T flour
1/2 lb turkey bacon - chopped

Boil and potatoes in salted water until fork tender.  Cut into 1/2 inch to 1 inch size pieces.  In a saucepan, dissolve sugar in water and vinegar.  Once dissolved, whisk in flour to thicken.  Cook 2 minutes.  In a separate pan, saute turkey bacon.  Add bacon to sauce and combine with potatoes.  Serve warm or chilled.

Pear and Avocado Salad
Spring Green Salad Mix
1 bosc pear, chopped, unpeeled
1 large ripe avocado, chopped
Cherry tomatoes
Feta Cheese

For the Dressing: (If I make this for a party in a large bowl, I double the recipe)1/3 cup olive oil
3 T Red Wine Vinegar
1 1/2 tsp sugar
1 1/2 tsp Dijon mustard
1 clove minced garlic
1/2 tsp salt
1/4 tsp pepper

Potato Pancakes made from leftover mashed potatoes
4-5 cups of leftover mashed potatoes
2 eggs
1/3 cup of flour
salt and pepper
1/2 cup grated onion (I used red onion, which was amazing)
3 tsp vegetable oil
1/4 cup Parmesan (optional if mashed potatoes do not have cheese already)

Combine potatoes, eggs, flour, onion, cheese, and salt and pepper until combined.  Put 1 tsp of oil on pan until hot.  Put four 1/4 cup mounds of potatoes and flatten with fingers once on pan.  Fry on first side 3-4 minutes until crispy.  Flip pancakes and brown until crispy on opposite side.  Serve with sour cream or plain.

Strawberries
Craisins
Honeydew Melon
Tomatoes
Feta Cheese
Grilled Chicken (recommended only when salad is the meal)
Combine all ingredients together.  If you don't have an ingredients that day at home, don't add it.  I have had this before with just lettuce, strawberries, and craisins and it was awesome.  Toss with homemade Balsamic Vinaigrette (see above under "Balsamic Vinaigrette" for recipe)
